Random Photos

I want to write something to post, I really do. It’s just been an odd couple of months and I am a creature of habit more than I would like to admit. I moved into a new place. I went from “The Shoebox”, my little 2 bedroom/1 bath apartment with no outdoor living space, to sharing a 4 bedroom house with room mates. Funny thing is I am in the same neighborhood….same street….just 2 blocks down. I like living in Sabalo Country. I love the wide beach….I like that it has the corner tiendas with homemade shrimp salad and people going through the neighborhood selling things all day; each one distinguishable both by the hour of day as well as their horn, whistle or other sound.  I like being close to things, yet when I wake up in the morning all I can hear are birds and the occasional referee whistle from the futbol parks in Pancho Villa and during still nights such as this one…the ocean crashing. Also, work has been busy…with all of my jobs. Productive? Remains to be seen. But busy. Something else to set me off my game was that I had no internet at home until a couple of weeks ago. I *know*  that I can write anywhere at any time, even at home and just save it and post it later at a place with WiFi…but again, I am an odd creature of habit. I can’t explain it. But now things seem to be settling into a routine. Getting my groove back, learning to live with new people, getting all my odd jobs into a schedule of sorts. It’s all coming together now. But anyway, again, I don’t know what to write! So I am posting a few random photos instead. Hope you enjoy.

Raisin and serrano quesadillas

I love to cook and between my heritage (New Mexico cattle ranchers on my Mom’s side- Virginia farmers on my Dad’s side), my travels and the places I have lived, I have picked up a lot of techniques and food combinations that I would never have thought of otherwise.  This is one of those ingredient marriages that is simple, yet makes you go…”hhhhmmmm”.

You start out with one of the things you can ALWAYS find in my house—tortillas. You can do so much with tortillas, one day I will be giving them a post all their own!

Another staple in my kitchen, serrano peppers. Take a couple of these and dice them up. Some people prefer to leave out the seeds, but not this girl! I like my spice!

Heat up some olive oil in a pan and saute the serrano peppers along with a handful of raisins. This is a recipe that you can tailor to your tastes and portions easily. Just adjust the raisin/serrano ratio as necessary.

After a few minutes, give the raisin/serrano mixture a couple good splashes of soy sauce. Yes, soy sauce! It will cook down very quickly so ,make sure you stir the mixture well to blend the flavors.

Grab a tortilla and sprinkle some chihuahua cheese on it. Give it a healthy layer of the raisin/serrano mixture then some more cheese. on top.

Place another tortilla on top, then back to the pan to brown both sides well!

Now just cut it into quarters, kick back and enjoy! Buen provecho!!

RIP Bounty

Hurricane Sandy is beating up the east coast as I write this and one of the biggest stories to come out of it, so far, is the sinking of the tall ship Bounty. I consider myself a tall ship sailor, albeit a very novice one, so this hits extremely close to home with me.

I have been lucky enough to work as crew on two schooners so far, the Patricia Belle (which will always be my mothership!) and the Virginia. When you crew on a boat, it is a very, very small world. In a short amount of time you have to trust and depend on each other almost without question. You learn each others likes, dislikes, habits and so forth—  WAY past the point of too much information! Because you spend time together on the open ocean, you build a protective, sibling-like bond with people that you normally might have given a fat lip to if you would have randomly met them in a bar. I believe that this feeling is spread across the tall ship community in general. Tall ship sailors and enthusiasts are of modest number, but tend to be very zealous! It takes true love to work on something that you know is going to suck  the blood,sweat and tears out of you on a daily basis, yet we jump at the opportunity to work and sail on one of these beauties every chance we can. So when something like this happens, we all feel it deeply. It could have easily been any of us.

This past summer two tall ship positions were brought to my attention. One was on the Schooner Virginia and the other was on the Bounty: I ended up on the Virginia. Now granted, I would not have been aboard the Bounty at this time, if I would have even worked on her, but it was still extremely eerie when I heard the news. The Bounty was making a run for Florida and they were skirting the outside of the storm. They were off of North Carolina and out of the worst of it when a generator quit and she starting taking on water and lost propulsion. They had been in frequent contact with the coast guard, so dive teams were dispatched quickly and effectively. There were sixteen aboard the Bounty when they abandoned ship, but while getting into the life rafts, a large wave hit and three crew were swept away. Only one made it back to the life raft. Fourteen of the crew were successfully saved by the USCG this morning, but at this hour Captain Robin Walbridge is still lost at sea. The other missing crew, Claudene Christian, has been found and she did not make it. Ironically enough, she was a direct descendent of Fletcher Christian, one of the crew on the original Bounty.  She was also 42 years of age which strikes a nerve with me as well seeing as I am 43 myself. Tall ship sailors tend to be in their 20-30’s and male. The girl club is rather exclusive and the older girl club? Very much so.

All I know to say, is rest In peace Bounty and Claudene. Captain Robin, we are waiting and hoping to hear news of your safe recovery soon. And deepest condolences to all friends and family associated with the ship and crew. The entire tall ship community across the world mourns your loss; We are all ship mates.

Juan (Manny) was one of the first friends that I made in Mazatlan almost 8 years ago. Handsome, charming, great cook and he knows his wine! This is his newest venture- he has taken one of my favorite street foods, papas locas, and kicked it up a notch with different ingredients and sauces. Nopales, octopus, lobster..the list goes on.

The decor is bright and tropical with great lighting. A local artist did all the work- the details are amazing!

Seven sauces are served on these neat handpainted surfboards. Each sauce is delicious and very different; everything from a spicy peanut sauce to a garlic sour cream.

It was a very tough decision, but I went with a potato featuring super tender beef, nopales and a chipotle cream sauce. Muy rico!! The next one I want to try has squid, octopus and some other yummy sea creatures. Next visit!

*UPDATE*

Paparadise moved to a location beside Hotel Belmar in Olas Altas. It recently closed down. As for Manny? He is currently the manager at the wildly popular “Squid Roe” in Cabo San Lucas. If you are in Cabo, go by and tell him, “Hello”!
